The extreme heat in the summer, coupled with our cold frosty winters and dry days, make it an ideal breeding ground. The truffieres in the region are mainly family businesses who with research, careful selection of a location, quality tree stock, and good soil management, are at the forefront of an emerging truffle industry in Australia. The Truffle Farm in the lush rolling hills of Mt Majura is one of the best in the region and supplies many local restaurants throughout the season with fresh truffles including Buvette Bistro & Wine Bar.

Scotch Fillet served with truffle butter
We popped in for lunch on a cold winter day and were instantly warmed up by the depths of flavours within the first taste of our two entrees – a Truffled French onion soup with Gruyère cheese croutons & a Slow-Cooked Duck Egg with fresh truffle, pata negra Jamón, peas, leek, hazelnut crumbs.

For mains we tried the fluffiest Twice-Baked Gruyere Cheese Souffle with fresh truffle, radicchio & baby cos heart salad and the Scotch Fillet served with pommes frites, mixed leaf salad and a generous amount of the tastiest truffle butter we have ever had, which when melted over the scotch fillet was pure perfection and the best steak we have had in Canberra.
