Hands up who is excited about the Enlighten night noodle market? I know that I am. So is Canberra local, Pink Pham, who will be participating in this brilliant (and tasty) event for the first time this year with her pop up restaurant – East Street Canberra. Pink who has been operating East Street Canberra since July 2015 says,
“I’m beyond excited for the noodle market, being amongst some of my personal favourite eateries is gonna be great!”
Having grown up around good food, with her grandparents owning a fast paced pho restaurant in Vietnam, Pink will bring her secret family recipes and her take on Vietnamese street food to the Enlighten Night Noodle Market this Friday!

I was lucky enough to meet the delightful Pink this week and she treated me to a spectacular lunch with all of these dishes. Ever since, I have been counting down the days until the Enlighten Night Noodle Markets so I can have some more! My pick is the Vietnamese noodle salad bowl with lemongrass betel beef. I smelt the freshness of the herbs before I even bit into the juicy moist meat. It was vibrant and full of flavour.
Having attended the markets last year as a visitor and seeing how busy all the stalls were with long queues Pink has assembled an experienced team ready to feed the Canberra crowds quickly.
