We love how cafes and restaurants across Canberra have embraced the the annual Truffle Festival – Canberra Region. As diners it means we can indulge from breakfast to dessert, getting to taste different ways chefs are bringing truffles to their menu.
Trevor McGrath, owner and chef at Trevs @ Dickson, is passionate about creatively incorporating truffles into his Winter menu. As a supporter of seasonal, local produce, Chef Trev’s truffles travel less than 10 kilometres from The Truffle Farm, in Mount Majura.
‘Trev’s Truffle Collective’ is eye-catching and intelligent
Trev’s current breakfast blackboard special, ‘Trev’s Truffle Collective’ is eye-catching and intelligent; a spin-off of their “Taste Collective” platter.
The truffle-infused tasting plate trio is comprised of a porcini brioche slider, truffled spinach eggs benny and truffled honey French toast (yes, you may lick your lips now). Porcini mushrooms sautéed with truffle butter and generously stuffed into a toasted brioche slider was the table favourite. Each tasting plate is served with a mini-juice of the day (we enjoyed our apple, pear, orange and pomegranate variety).
The beauty of ‘Trevs Truffle Collective’ is that you do not need to decide whether to order a savoury or sweet dish or have menu envy over what your fellow diners have ordered. The porcini truffle mushrooms were full of flavour, the egg yolks gooey and we could have eaten a bowl of the truffle honey mascarpone by itself.
While we enjoyed our breakfast, the blackboard dinner specials Chef Trev is serving during the truffle season caught our eye. Mains included the porcini truffle butter mushrooms served on Angus scotch steak, (or for vegetarians, fettuccini) chicken supreme with truffle mousse and for dessert a honey truffle creme brûlée or Trev’s signature apple crumble served with semifreddo salted peanuts with truffle Anglaise.
Trevs @ Dickson is a suburban favourite; the Saturday morning we visited the restaurant was buzzing with couples, families and groups of friends. We suggest booking ahead, or ordering a coffee and soaking up the atmosphere if you need to wait for a table.
